F&B Warehouse & Commissary Supervisor

General Purpose:

The Commissary & Warehouse supervisor oversees the functions of the largest production kitchen at Purgatory Resort, in addition to a bar, small cafeteria line, and front of house service to up to 200 children per day. Additionally, this position oversees the resort’s liquor and wine purchasing, receiving, and distribution to up to ten venues.

Essential Duties/ Responsibilities:

Collaborate with Snowsports School, Childcare, and various other departments on food service needs.

Become familiar with particular needs of small children, and food service for “at-risk” populations. Cater to needs and desires of our youngest guests at all times.

Oversee and participate in food production for Childcare, Snowsports School, and cafeteria line daily.

Oversee production of soup & chili for all F&B outlets, including production schedule, HACCP plan oversight, product procurement, delivery, and more.

Recruit, train, and monitor the activities of up to 10 staff members including bartenders, cashiers, bussers, and production cooks.

Receive product from various vendors and direct in proper delivery.

Oversee the storage, inventory, organization of all warehouse supplies including food, paper supplies, liquor, wine, and hardware.

Keep back loading dock clean and organized with regular trash removal & organization.

Assist other units as necessary.

Assist Food & Beverage Director as assigned.
Job Qualifications:

Knowledge, Skills and Abilities: Expert organizational skills. Solid office skills. Solid knowledge of restaurant operations including inventory management. Extensive experience in kitchen settings, especially high-volume, bulk-production. Solid computer skills and knowledge of basic accounting principles. Expert in food services. Solid interpersonal communication and supervisory skills. Must be able to safely ski intermediate runs.

Alertness, precision, ingenuity, problem solving, patience, persuasiveness, tactile, olfactory and visual discrimination, reasoning, judgment, concentration, creativity, memory, aesthetic sense, speaking and writing, imagination and initiative are all necessary abilities.

Education or Formal Training: Minimum two years on-the-job training. Must have a valid driver license, clean driving record, and be 18 years or older.
Material and Equipment Directly Used:

Simple office equipment, pallet lifter, snowcat, skis, ski lifts and occasionally a snowmobile.

Working Environment/ Physical Activities:

50% of the working day is spent outdoors in constantly changing weather conditions including extreme cold, snow and wet. 50% of the work day is spent near loud noises and land vibrations. Fumes, odors, dusts and gases present outdoors in the dock area. 50% of the work day is spent standing and constantly lifting and carrying objects up to 1500 pounds. Frequently climbing, balancing, stooping, kneeling, crouching, reaching, feeling, and fingering objects. Depth perception, field of vision, of tasting/ smelling are frequently required. Near acuity and color vision are constant requirements. Potential hazards include occasional exposure to toxic, caustic chemicals, frostbite, falling ice and snow and being in the dock area with a 4 foot drop.
